I started this post on Wednesday, January 21, but I was so sick that day and Thursday because my husband and I had breakfast out and I know my food had gluten in it. It was the worse so far I had to deal with. 8 hours in a row I was so sick. Barely slept Wednesday night. I was sick on Thursday, but not as bad.

Miss Behr, Come to my house when I eat any kind of gluten and you will see what it does to my body. A little bit of gluten like a crumb can do so much to my body. The immune system sees the gluten as a foreign invader and does whatever it takes to get rid of it. Healthy tissue is being destroyed and this is not good. Nutrients are not being absorbed. In the future, I have to be screened for cancers in the stomach and the intestines. The more damage gluten does to my body, the worse it is for me. Before you open your mouth about a disease you do not know about, do your damn research!! I mean you do it. Not someone else. Go to this website to see all of the symptoms of Celiac Disease: HERE. There are over 300 symptoms.
I believe education is the key with any disease. We need more positive awareness on Celiac Disease and Gluten Intolerance. I am so tired of seeing videos of celebrities putting those with Celiac Disease down and those who feel that eating Gluten Free is the new fad. They are saying "Hey, those people with Celiac are lying, that they are not that sick!"
Gluten Dude says it so well. "Well let’s see Joy. There are 318,000,000 people in the United States. An estimated 1 out of 133 people have celiac. That means about 2,385,000 people have celiac disease, many of whom are undiagnosed, suffer and won’t get tested for celiac because of idiot comments like yours. Add to that the number that have NCGS and I will conservatively estimate that over 12,000,000 people in this country alone have health issues caused by gluten. Still bother you Joy? Or because it doesn’t affect you personally, you simply don’t care."
Do you know someone with Celiac Disease? Do you know someone with Gluten Intolerance? Both of those questions for me is a yes. I meet people every day with Celiac Disease. Ethan has Gluten Intolerance. His teachers told me yesterday that they can see a difference in him since he has been gluten free. I do not see my son, Ethan, crying because his tummy hurts him or screaming because he needs to poop.
I do not understand why people are so outspoken about gluten free living. Do you think we want to spend up to twice as much for food as those who live with Gluten? That is a NO. It is because we have to.
